Cooking & Coloring In The Kitchen

At this time, many Americans are spending more time at home, cooking, baking, and for those with young kids, doing lots of arts & crafts.

We would like to share one of our favorite cookie recipes from BlueStar All-Star Chef Addison Osta Smith, winner of MasterChef Junior.  This Kitchen Sink Cookie recipe starts with a chocolate chip cookie base, and then adds whatever else you have on hand.  This is a great recipe as you try to use up things in your pantry.  It also does not require a lot of anything, so if you have the tail end of a bag of chips or pretzels that you do not want to waste, this is the perfect way to use them up.  The cookies end up being a perfect blend of a lot of different things.  It is her take on the original Compost Cookies® from Chef Christina Tosi.  Addison prefers the peanut butter chips over the butterscotch chips and extra pretzels and potato chips instead of adding the graham crackers.  But feel free to modify this based on what you like and what you have!  Marshmallows are the favorite addition for some.

Kitchen Sink Cookies

Ingredients:

  • 1 cup butter, at room temperature
  • 1 cup granulated sugar
  • 2⁄3 cup tightly packed light brown sugar
  • 2 tbs corn syrup
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 1⁄3 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp kosher salt
  • 3/4 cup mini chocolate chips
  • 1/2 cup mini peanut butter chips
  • 1⁄3 cup old-fashioned rolled oats
  • 2 1/2 tsp ground coffee
  • 2 1/4 cups potato chips
  • 1 1/4 cups mini pretzels

Instructions:

  1. Preheat oven to 375°F
  2. Combine the butter, sugars, and corn syrup in a standing mixer, cream together on medium-high for 2 to 3 minutes.
  3. Add the egg and vanilla, and beat for 7 to 8 minutes.
  4. Reduce the speed to low and add the flour, baking powder, baking soda, and salt.
  5. Mix just until the dough comes together, no longer than 1 minute.
  6. Still on low speed, add the chocolate chips, peanut butter chips, oats, and coffee and mix just until incorporated, about 30 seconds.
  7. Add the potato chips and pretzels and mix until just incorporated.
  8. Do not to over mix or break too many of the pretzels or potato chips.
  9. Wrap dough in plastic wrap and refrigerate for 1 hour, or up to 1 week
  10. Remove from refrigerator, and using a cookie or ice cream (!) scoop portion out the dough onto a parchment-lined baking sheet
  11. Bake for 10-18 minutes depending on the size of the cookies that you made. Cookies should be faintly browned on the edges yet still bright yellow in the center.
  12. Cool cookies completely and serve!
